BBQ Pulled Pork Recipe

1 pork butt cut into 4 pieces 
1/2 gallon chicken stock 2 bottles IPA beer
2 chipotle peppers
(pureed with chicken stock) 10 black peppercorns
2 bay leaves
1 onion chopped
2 carrots julienned
cajun spice, salt and pepper


Rub the pork down with cajun spice and rest for one hour.  Get saute pan smokin hot and sear the outsides of the pork until golden brown and delicious. Remove pork from pan and put into roasting pan.  Add onions, carrots and garlic to pan and saute until onions are caramelized, deglaze pan with IPA beer.  Pour the onion mix over the pork and add chicken stock, peppercorns, bay leaves, cover and cook at 375 for 3 hours.  Remove pork and put on sheet pan, cover with BBQ sauce and put back into oven for 15-20 minutes until the bbq sauce has caramelized.  Let cool slightly and pull.  Place a healthy serving on your favorite bread, add coleslaw and a couple pepperoncini peppers and enjoy.
